An old standard made with healthier ingredients.
1/3 cup soft organic butter
1/3 cup coconut oil
3/4 cup succanet or rappadura
4 t. milk
Mix following ingredients before adding to wet ingredients;
2 cups Spelt Flour
1 1/2 tsp Baking Powder
!/4 tsp sea salt
Additional flavorings may include 2 tsp lemon zest, 2 Tablespoons toasted sesame seeds or almonds or a smidge of fruit sweetened jam (no sugar added) on top of cookie. Chill dough for at least an hour before rolling out to cut into shapes. Bake at 375 for 8-10 minutes on a buttered cookie sheet. Loosen cookie with spatula before completely cool to ease removal from cookie sheet when cooled.
Decorate with toasted nuts, piped jam, piped cream cheese and stevia or carob drops.
