Potatoes- Potatoes are much higher in potassium than bananas, making them a great summer vegetables. They are also high in Vit B6, calcium, iron and magnesium. Potatoes contain many anticancer substances and balance alkalinity and acicity in our bodies. Don’t refrigerate your potatoes, they turn into sugar!

Steam a handful of potatoes in your steamer w/ a little salt and pepper. When potatoes are close to done, cut them in half and douse them liberally with olive oil and crushed garlic cloves in a mixing Bowl. Add some cayenne or hot chile powder and chopped rosemary, thyme or chives and lay out in a glass roasting pan or cookie sheet. Pop into hot oven, 425-450, and roast for 25-30 minutes. Serve on a platter with hummus for dipping.
