Butterfly cut and season 3-4# trimmed leg with following ingredients and allow to marinate at room temperature for 2-3 hours before grilling.
3 T of paprika
2 T of cumin
3 T of chili powder
2 T of Fennel seed
1 T each of Thyme and Oregano
4 T of Sea salt
1 T of fresh ground black pepper
2 lemons squeezed
5 cloves of garlic, crushed
1/2 cup of extra virgin olive oil
Grill on medium hot part of grill, turning and basting with marinade every 5 minutes for total cooking time of 20-25 minutes. Let rest, then slice thinly and serve between a bun with lettuce, tomato, onion, cucumber and following yogurt sauce.
