Edamame grow great in Paonia. You haven’t had Edamame till you grew them yourself!

1 pound of Edamame, unshelled, rinsed

6 cups water

1 Tblsp Salt

More salt for sprinkling  after cooked

Boil water and add 1 T  salt. Add Edamame and boil for 4 minutes, Drain. Sprinkle more salt over them while they are hot. Let cool to comfortable temperature on fingers. Take out of pods and eat.

I sometimes sprinkle a little cayenne and toasted sesame seeds over them with the salt.
