Dava Parr

Founding owner of Fresh and Wyld CSA, now called Happy Belly CSA
Dava has been a farm to table chef and grower for 12 years on the Western Slope of Colorado. Dava learned about CSAs while living in London, England. Hungry for a taste of fresh produce and the visual delight of open land being farmed, she would leave her small London cafe and board a train to the countryside looking for gardens. She found quite a few and she learned that the farmers would be happy to sell her a restaurant sized CSA box each week. They would even deliver it to her, which is good, because she only had a bike at the time and the farms were 50 miles away! When Dava moved back to Aspen, Co, in 2001, she opened a restaurant in the back of a small health food store and called it Aspen Fresh and Wyld.
Unable to cook anymore off the back of a truck from her enriched London cooking experience, Dava went in search of farmers, local to Aspen and found them all in Paonia and Hotchkiss. It was fun making menus every week for her Aspen dinner customers and emailing them her weekly menu but after a time, Dava wanted to live nearer the farms. Being an eager to please person, she promised her old dinner customers that she would bring them produce and recipes and teach them how to cook. That is the short story of how this CSA got started…
